Introducing our profile series! A series that will feature each of our incredible baristas which will allow you to become familiar with the friendly faces behind your perfect cup of coffee! To start things off, this is Eileigh! You may occasionally see her behind the counter when she returns to Lethbridge to escape her studies in Microbiology at Dalhousie University, Halifax. She still has quite a few years to finish in her studies, but ultimately she wants to get into medical research. Other than studying, she loves to travel! So far she has made it to Tokyo, Paris, Munich, and Venice (just to name a few). She also devotes time to explore local cafes wherever she ends up, trying new coffees and teas (and never passing up any of the baking). Her favourite bag of Red Engine Coffee is the Ethiopian Guji, and typically makes a cup via French Press for her early morning classes. If she had to drink one type of coffee for the rest of her life, she would choose the Flat White, claiming it has the best espresso to milk ratio. You may not see her for a while, as she is drowning in biochemistry and statists, but keep an eye out (you never know when she’s coming back for a visit!).
