an end of the week meal prep went down yesterday because I was trying to use up any randoms we had in the fridge before they went bad and this was the result 🔥 team #nofoodwaste roasted up some sweet potatoes, cooked up some simple cauli rice in evoo and salt & pepper, another batch of bone broth quinoa, roasted garlic butter corn, some greens, and beet hummus. to make corn, roast on a stovetop griddle until slightly chard, then toss in a mixture of @kerrygoldusa butter, @simplyorganicfoods garlic powder, and salt & pepper. to make beet hummus, into a blender add about 1 medium or 2 small whole roasted beets, a big spoonful (~1/4 cup) of tahini, juice of 1/2 lemon, 1/4 cup olive oil, cumin, salt, and pepper. hope you all had a lovely week! it’s friday!!
