My quiche ready for oven. Bit of a faff working out everything but worth it and took a extra few mins! Here's some amazing Lunch or Dinner Inspiration for you💛Healthiest Creamy Cashew Mac & Cheese🤤 The spinach on top is to try make it look presentable for a picture😅43g of Protein Per Person in this dish🌿Recipe for Two People (Half it for 1)120g Cashews (Soaked in a bowl with Hot boiling water for however long you can - I soaked them for an hour but the longer the better) Once soaked, add in a blender with4 TBSP Nutritional Yeast (Amazing Cheesy Flavour, High in Protein and packed with B12 - Get yourself some, Holland&Barrett have it)Half a Lemon Squeezed1 Shallot (cut up into small pieces and placed raw into blender)1 tsp Garlic Salt 1/2 tsp Tumeric1 tsp Paprika Salt & Pepper to taste I had dairy free Vio-Life Cheese around so I added a slice of that into the blender too which made it yummy but it really is not necessary - the cashews and Nutritional Yeast make it in general)And finally a cup of Hot water into the blender and blend - Side note, I used the water of the pasta that I boiled as it has a creamy consistency since I used a mix of Green Pea and Red Lentil Pasta (200g of each so 400g in total - as mentioned, the recipe is for two people so half it all if it's for one :) I cooked up 2 shallots, Mushrooms and spinach on the hob (no need for oil!!! Use water, the mushrooms also let out so much water, oil is unnecessary) and optional but I added a splash of red wine to that as I had some - All this is extra stuff :) Simply add in the cooked pasta into the pan and pour the sauce on and mix it up!! Add some more salt and pepper to taste😊 Such an amazing healthy alternative to mac and cheese which kept me feeling goodddd💛
