Making appams always reminds me of the first time I learned how to make it. I was probably 7 or 8. I’d watch my mom from the breakfast table swirl a dozen or so appams on the chatti. It seemed so effortless. Noticing my intrigue, she called me over to give it a try. And a second, third, and fourth try. It wasn’t effortless for me, but over patient time, I finally got the swirl down to where you’d get a plush, soft center, with crisped, lattice edges.
