Sunday meal prep done! I usually spend an hour or so preparing some things at the beginning of the week to make my life easy. GF turmeric cornbread, trail mix, carrot miso dip, sweet potato dice ready for roasting, fruit and veg cut up to be frozen for smoothies. Barley Bircher and some marinated chicken not shown. 👍🏻☺️

Salmon and sweet potato patties.Dinner inspiration so easy (switch out a can of chickpeas or lentils for vegan 🌱 option)!.These are super forgiving and versatile, so simple as that’s what the JBT Program is all about....1 large orange and one large purple skinned white flesh sweet potato2 portions salmon, no skin -Boil potato and Steam fish on top 1 spring onion Few sprigs dill and parsley (any fresh herbs will work well) I red chilliSalt and pepper 1 tbsp lemon infused olive oil (use lemon zest and plain olive oil if you don’t have it) Good squeeze fresh lemon Add some capers if you like 💁‍♀️ Mash everything together. Bake at 180C in a little coconut oil until golden - remember everything is cooked so it’s just about getting a little colour! Serve with rainbow veg and JBT avo Mayo 👌You can also add things like peas and corn, and white fish will work just as well. Add some Thai herbs and spices for a yummy twist.
