My recipe for Shitor by EUNICE EKOR .Here are the instructions:Be sure to use a pan with a heavy bottom, so the sauce won't burn.Add oil to the pan and heat it. Add onion and tomato ingredients and fry the mixture for about 10 minutes, being careful not to burn it. Add the dry ingredients into the pan, stir well, and continue cooking it for an additional 30 minutes. Add salt to taste.The finished sauce should be a rich dark reddish-brown color and have a thick texture, not at all runny. Some of the oil may separate out and that is fine. When cooled, put the sauce into a clean glass jar and cover. Make sure about half an inch of oil stays on the top, covering the paste. This sauce keeps indefinitely and does not need refrigeration.Notes: * refined palm oil is used here in Ghana, especially Obaapa or Frytol brands are good. ** You can use any size dried shrimp, tiny to big, and if you buy them already ground it saves time. My recipe for Shitor by EUNICE EKORShito is something everyone here who makes it has their own special recipe, like Americans all having their own secret recipe for BBQ sauce or chili. Shito does not need refrigeration, but if you want you can keep it there. It does need at least a half-inch layer of oil on top, for it to keep well. Mothers will send jars of shito with their children when they are sent off to boarding school. What kind of pepper can be used here, well just about any pepper, in my neck of the woods habanero is fairly common. Available in most major supermarkets, obtaining fresh scotch bonnet pepper is another story. Only a select few carry them and sometimes it’s like looking for a needle in a haystackI was lucky enough to get a bunch of these on one of my trips to the East Coast –they have them in abundance.To cook or not to cook? Well again, personal preference. Some say cooking tempers the heat level while others vehemently disagree. Me, I don’t know? I have never conducted a scientific experiment to compare both. BIRD PEPPER SAUCE by Steven RaichlenThis mega-hot pepper sauce uses bird peppers- a generic term that applies to super-hot, small peppers that grow upright on the plant. Examples include the Mexican chiltepin, the Peruvian charapita, and the Brazilian yellow bird's eye pepper. If you cannot locate bird peppers, you can substitute four habanero or Scotch Bonnet peppers. To finish up all you have to do is mix in the vinegar, salt and lime (or lemon) juice and mix well with the ground peppers.This recipe is as traditional and basic as you can get when it comes to peppersauce in the Caribbean. You can now get creative and add other ingredients like papaya (green), bitter melon, carrots and other herbs. Since we used vinegar this pepper sauce can remain on your kitchen counter as the vinegar will act as a preservative. For a longer shelf life you can certainly keep it in the fridge, but I’ve noticed that when you leave hot sauces in the fridge it somehow tames the heat factor! Store in a clean glass container.Back in the day I remember my Uncle B (I spoke about him in my cookbook) would handle all the peppers with his bare hands and he’d be cool with it. Traditional Caribbean Peppersauce (hot sauce) Recipe by Caribbean PotNow it’s time to set up the mill on a sturdy work bench (I used the desk in our kitchen). Assemble the mill, then adjust the settings at the back (2 screw-like things) to control the texture of the ground pepper. Once you start turning the handle with the peppers in the catchment area you’ll be able to better determine the coarseness you want. When clamping down the mill to your work surface I would recommend using a piece of cloth or paper towels to protect the area from getting damaged as you tighten it.Place a deep bowl under the area where the ground peppers will fall, then start adding a mixture of the garlic, peppers and chopped cilantro into the mill and start cranking. Traditional Caribbean Peppersauce (hot sauce) Recipe by Caribbean PotNote: As mentioned this past summer I had an excellent crop of Scotch Bonnet, Habanero, Chocolate Scotch Bonnet and Trinidad Moruga Scorpions… all deadly peppers. But you can use any 1 or do a mix as I did. Traditionally in the Caribbean we would use Scotch Bonnet peppers for this recipe.IMPORTANT: Be mindful that these peppers are extremely hot and the oils can cause serious irritation (and pain). Do wear gloves and wash your hands immediately after with soap and water. Do not touch any sensitive areas after handling these peppers.Wash the peppers and trim off the stems and give the peppers a rough chop. For a fiery pepper sauce leave the seeds, if not do remove them if you wish to tame things down. Used to grind the dhal for making dhalpuri roti, preparing the dried fruits for making traditional black/rum cake, making homemade pepper sauces, grinding dried corn for making chilli bibbi and various other uses in the kitchen.
