The best thing since baked cookie dough. 🍪💘Here’s the recipe 💘👩🏻🍳 Chocolate-Covered Vegan Cookie Dough BarsPrep: 10 mins Makes 16 bars You'll Need... For the bars:1 and 1/4 cup (125f) Almond Flour (Ground Almonds)5 Tbsp. coconut flour Pinch of salt1/2 cup + 2 Tbsp. Maple syrup2 and 1/2 Tbsp. Coconut Oil, melted5 Tbsp. Peanut butter1 tsp Vanilla extract3/4 cup dark chocolate chips (70% cocoa solids ideally & usually have zero dairy so are vegan)For the topping:1 cup dark chocolate chips or a large bar of dark chocolate (at least 70% cocoa solids)2 Tbsp. Peanut butter1/2 Tbsp. Coconut oilDirections:Mix the almond flour, coconut flour and salt in a large mixing bowl then set aside.Mix maple syrup, melted coconut oil, peanut butter and vanilla extract in a separate bowl.Pour your wet ingredients into your dry ingredients and mix to combine. Add your chocolate chips and mix.Line a square or rectangular baking tray/brownie tin with greaseproof/parchment paper. Press your dough into the pan and flatten with your hands or with the back of a serving spoon. Place in the freezer to chill for 20 minutes.For the topping:Melt your chocolate chips, nut butter, and coconut oil in a microwave-safe bowl in 30-second intervals or over a double boiler on the stove. More than one frantic mom has called me about their children getting into an essential oil. Here’s what to do... go grab your biggest jar of coconut oil or any other high quality oil and bathe said child in it. This girl ate a capsule with a few drops of oregano. I almost ran to the sink, caught myself and headed to the pantry of our coconut oil. She was upset, screaming like crazy. Once the Oils was diluted, she calmed down and is totally fine now.
