Grilled Salmon with Yogurt Sauce

- 1/2 cup Greek yogurt
- 1/2 cucumber, peeled, seeded and roughly chopped
- 1/4 tsp organic raw honey
- Pinch of Himalayan salt
- 2 tsp fresh mint leaves
- Freshly ground black pepper
- 4 salmon fillets
Place a fine mesh strainer over a bowl. Add the yogurt to the strainer and drain. Transfer the strained yogurt into a mixing bowl. In a food processor, combine the roughly chopped cucumber, honey, salt and mint until chunky but not completely liquefied. Fold the cucumber mixture into the strained yogurt. Refrigerate until ready to serve.
Preheat the grill to medium. Season the salmon with salt and pepper. Grill the salmon for 4 to 6 minutes on each side, or until it is just cooked through. Drizzle salmon with yogurt sauce.
